This traditional Italian white bean soup is a specialty at Valentino’s Ristorante. A classic in Tuscany, the chicken stock is flavored with aromatics (onions, celery, carrots, garlic), oregano and parsley. To that, they add crushed tomatoes, cannellini beans, ditalini (short pasta) and a dose of rich, salty pancetta (Italian bacon).
